I few weeks ago I posted a picture on my Instagram of a super quick pasta meal that I made…my email went crazy! People were dying to know what was in it.
This blew my mind-thank you!!!

There are only 6 ingredients to this meal and it is truly amazing.

12 Minute Pasta Dinner

  • 1 package of pasta {I use brown rice fettuccine}
  • 2 giant handfuls of spinach
  • Goats Cheese {amount varies to taste}
  • 1 carton of Grape tomatoes
  • Olive Oil
  • Pepper
  1. Cook pasta as per directions {remember if you are using GF pasta that timing is everything!}
  2. While pasta is cooking wash and cut tomatoes in half. Put into a large bowl and drizzle with olive oil and pepper. Mix
  3. Add your handfuls of spinach to a colander in the sink
  4. When pasta is cooked drain overtop of the spinach {sneaky yeah?!}
  5. Add pasta + spinach to tomato mixture and add goats cheese, combine it all together
  6. Once it’s all mixed add more goats cheese to the top and sprinkle more pepper if your shall wish
  7. Consume and return for seconds
