I came across a post from Ashely at Edible Perspective where she added butternut squash to her smoothie..I was intrigued.

So I ran out and got me some frozen squash and discovered absolute magic.

Butternut Squash Swirl Smoothie

I made a few tweaks for my liking and now I am fully committed.

  • 1 cup frozen butternut squash
  • 3/4 cup coconut milk {I used some cream some liquid and saved the rest for the next day}
  • 1/2 cored apple, diced
  • 1 handful kale
  • 1 tablespoon almond butter
  • Cinnamon
  • Grated fresh ginger
  • Vanilla Protein Powder {optional}

Blend and Enjoy!
