Chocolate Coconut Date Balls

Sometimes I get cravings for chocolate and one little bite is just enough. Sometimes I require many, many bites…but that’s off topic.

I love being able to open up my freezer and viola! something to snack on that fulfills my chocolate desires.

  • 5-6 pitted dates
  • 1 cup of nuts {I used raw almonds, pecans + cashews}
  • 1-ish tablespoons Coconut Oil {no need to pre-melt} + additional for rolling {see below}
  • 1/4 cup raw cacao powder
  • A dash of cinnamon
  • A pinch or two of sea salt
  • Handful dried cherries {optional}
  • Shredded coconut for rolling

Add all ingredients, except the shredded coconut and extra coconut oil, into a high speed blender or food processor and process until smooth, scrapping down the edges as needed.

Transfer to a medium bowl. Roll with hands into balls of desired size and then roll into shredded coconut.

Throw them into the freezer for at least 30 minutes and then indulge. I like to make a few batches and keep them on hand for those pesky cravings.

TIP #1: wet hands will help roll the balls better!

TIP #2: before rolling into the shredded coconut, freeze your balls for about 10 minutes. It will help them to hold their shape.

TIP #3: to get the coconut to stick better, melt 1 tablespoon of coconut oil, roll the balls in the oil THEN roll into the shredded coconut. As the coconut oil cools the shredded coconut will cement to the balls!
