Creamy Potato + Cauliflower Healing Soup

It’s currently summer and I get that hot soup isn’t always what people are craving, but can I just say… soup is the shit.

I would eat soup anytime time of year. There’s something so comforting about it. And especially on those days where you just need a little bowl of hugs. And this soup, my friends, this is the hug you’ve been looking for!

There a gorgeous kick to this that keeps your body warm and fuzzy and then throw in some delicious healing veg and you are on your way.

(please excuse the messiness of the recipe details, it’s just so simple I couldn’t bring myself to write it out in detail)

  • 2 small potatoes
  • Enough broth, water or mix of both to cover, boil about 7 mins
  • Add 2 handfuls of chopped cauliflower + 1 cup chopped onion, boil another 5 mins
  • Add in some minced garlic, hot sauce, tamari, thyme, s+p- stir it all up (amounts are up to you and your mouths preference)
  • Add a few stalks of chopped celery and a couple handfuls of chopped kale and cook another few mins
  • Make a cashew cream (1/4 cup soaked cashews blended with a small bit of coconut milk) add to soup and stir it up
  • After a couple mins the soup is good to devour
  • Serve with delicious crusty bread

You can, of course add whatever else suits yer fancy
