Easy Peasy Pasta Sauce

I am a pasta addict. I’m pretty sure deep down we all are…am I wrong?

I like the convenience of buying pre-made pasta sauce but I can’t stand all the ‘extras’ that come with the ingredient list. So the easy solution…make my own.

I never really realized how easy this is to do. And it is so versatile. You can add anything you’d like; white wine, peppers, vodka, spinach, zucchini…the world is your oyster. Oysters!

So without further ado, I give you my Easy Peasy Pasta Sauce. Feel free to use this as a simple base and add your own flare to the sauce, and then make extra and bring it on over for a pasta party!

  • 4 tablespoons EVOO
  • 1 small onion, diced
  • 1-2 cloves of garlic, minced {if you like more garlic, go for the second or maybe even third clove}
  • Salt + Pepper to taste
  • 3-5 ripe tomatoes, chopped
  • 1/4 cup tomato paste {optional}
  • 2 cups sliced mushrooms
  • 2 tablespoons finely chopped herbs {I used parsley but you can also use basil or thyme, or anything else that tickles your fancy}
  • 1/4 cup shredded Parmigiano-Reggiano {optional}
  • 1 package of your favorite pasta
  1. In a large saucepan heat EVOO on medium heat.
  2. Add onion and cook for about 3 minutes.
  3. Add garlic and continue cooking, stirring often.
  4. Add in tomatoes and s+p and reduce heat to low-med.
  5. Fill a large pot with cold water, bring to a boil and cook your pasta according to directions.
  6. Allow the sauce to cook down and add in tomato paste if using {this will help to thicken the sauce up BUT be wary of the brand and added ingredients}
  7. Once the sauce begins to thicken up, add the sliced mushrooms and chopped herbs.After about 5 minutes add Parm if using.
  8. Keep cooking down until the sauce reaches the consistency that you desire, or until you just can’t handle waiting anymore.
    *If you like your sauce thick, you can use your immersion blender and blend until you are happy. I like to leave mine with some texture.
  9. Top your cooked pasta with your amazingly delicious sauce and top with additional basil.
