Breakfast is always a challenge for me. I usually end up having eggs of some sort.

Now, don’t get me wrong, I love eggs but sometimes a girl needs some change in her life. And that change comes in the form of overnight oats- which are THE BEST thing for change because you can change them a million different ways, so it’s never the same!

Use the base to start and then add any and all extras that you like. You will be amazing at the creamy texture of these oats. And the best part is that they take under 4 minutes to make. You start the magic the night before and when you wake up it’s basically ready to go! You honestly cannot have it any easier.

So what are you waiting for?

The night before:

  • 1 cup almond milk
  • 1/3 cup rolled oats (not instant)
  • 1/4 cup chia seeds
  • Sprinkle cinnamon
  1. Stir ingredients together and cover. Place in the fridge for overnight magic to commence.

*put 1 banana in the freezer

In the morning:

  1. Remove oats from the fridge and stir. It will be nice and thick and creamy!
  2. Stir in additional ingredients. Pick and choose any or all…

  • Shredded coconut

  • Seasonal berries

  • Peaches
  • Grapes
  • ok, really ANY fruit {just be sure to limit your fruit to 1-2 pcs. per day}

Banana Soft Serve:

  • 1 frozen banana
  • 2 tablespoons almond butter
  1. Place in blender or food processor and blend until smooth.
    (You can double, triple or even quadruple the recipe and store the leftovers in the freezer for a quick dessert!)
