I’ve realized that I eat a lot of pasta. Always gluten free but still…
So I thought I’d change it up a bit…enter- mixed pasta.
And you only need a few simple ingredients…
Take your veggies and lightly roast em up… also add some asparagus if you’d like (I like, I just didn’t photograph)
While the veggies are roasting start cooking your GF pasta, I used Quinoa which is my all time favorite. If you haven’t tried it yet please do.
It honestly tastes like regular pasta. Just watch your cooking times, it can get sticky very fast.
THEN… while your pasta and veggies cook… spiralize your zucchini…. yep, MIXED pasta.
Adding zucchini pasta brings a whole other element to the dish. If you don’t have a spiralizer you can cut the zucchini thin either with a knife or even using a veggie peeler.
Put the zucchini into a colander. Once your pasta is cooked pour the water and cooked pasta over the zucchini in the colander. <–this is optional. Doing this slightly softens the zucchini. Transfer to a plate.
Add your veggies and top with a little goats cheese and pepper. If you’d like you can also drizzle some olive oil or even sauce if you’d like.
Add chopped tomatoes and there you have it.
It’s not fancy; it’s not complicated; it’s just delicious!
