Not Your Mama’s Potato Salad

I LOVE Potato Salad. Picnics & BBQ’s just are not the same without it; but what to do about all that nasty mayo?!
Well friends, I have your solution.
Keep in mind that, as with most of my recipes, I make this differently every time. I also usually never write things down which makes blogging about it that much more adventurous. I’ll do my best to be specific but I’d love for you to take the following as a baseline and create your own slice of magic.

Not Your Mama’s Potato Salad

  • 4 white & red potatoes, cut into chunks
  1. Boil potatoes for about 15 minutes or until just soft, be careful not to over cook- no one likes mushy potato salad!
  2. While the potatoes are cooking make the dressingpotatoes

Dressing

  • 1/2 cup-ish Veganaise {if you are so inclined feel free to make your own mayo it place} this amount is all depending on how saucy you like it
  • juice of half a lemon + some zest
  • 1 tbls maple syrup
  • 1 tbls pickle juice <–trust me
  • 1 tbls apple cider vinegar
  • A couple shakes of pepper
  1. Mix all dressing ingredients together in a small bowl
  2. Once potatoes are cooked drain and let cool, if you are in a hurry you can put into the fridge to cool.
  3. Pour on the dressing and mix.
  4. Add chopped green onions, maybe a little more pepper.
  5. Email  to thank me ;) potato salad
