Savoury Potato Kale Waffles Vegan Vegetarian Breakfast Lunch Dinner Ideas Recipe

Waffles. I freaking love waffles. And these are no exception to that love.


  • 1 potato
  • 1 small onion, diced
  • 1-2 cloves of garlic, minced
  • 2 handfuls of kale, destined and torn into smaller pieces
  • Juice of 1/2 a lemon
  • 1 egg or egg replacer
  • S+P
  • Sunflower or Coconut Oil for frying
  • Your favourite and most creative toppings
  • Add a fried egg for a little added something or leave it off. If vegan “eggs” are your jive you can go that route as well.

What To Do:

  1. Spiralize your potato (you can also shred it if you don’t have a spiralizer, although I highly suggest you get one, they are super fun!)
  2. Soak your potato in cold water for up to an hour
  3. Heat oil on medium in a frying pan and add onion. Cook for a couple of minutes then add the garlic
  4. Add potato and continue to cook, stirring to prevent burning
  5. While potato mixture is cooking grease and pre-heat your waffle maker to a medium setting
  6. After about 5 minutes of cooking add kale to potato mixture and add lemon juice. Stir that baby up and cook for about 3 more minutes
  7. Transfer mixture to a bowl and add egg or replacer and S+P. Stir is up until combined
  8. Add half of the mixture to your waffle maker and close that lid for at least 5 minutes. Keep cooking until nicely browned
  9. Remove and cook up that second half
  10. If adding toppings, this would be the time to get those going

Have you heard about watermelon pizza? Of course you have. Because you don’t live under a rock.
So here is my take…3 ways, because I’m an overachiever. :)

  • Start by washing the outside of your melon and then slicing into whole slices. From there you can cut into smaller pieces or even leave it whole and slice as requested.
  • (For the most amazingly intense flavour, grill your slices before topping!)
  1. Yogurt of choice, blueberries and hemp seeds
  2. Feta, pine nuts and a drizzle of balsamic glaze
  3. Fig jam, arugula and strawberries

This ‘recipe’ …well, it’s really just too simple to call it a recipe…so here’s your inspiration for the day :)

  • Corn Tortillas or Shells if that’s your kind of thing- hey you could even use wheat tortillas
  • 1/2 half head of cauliflower, cut into small florets
  • Your favourite taco seasoning {I make a home blend of cumin, cayenne, salt, smoked paprika, garlic powder, chill powder and oregano}
  • Pineapple Salsa
  • Grilled Corn
  • Avocado Dressing {I like to blend avocado, lime, greek yogurt or cashew cream, and water to thin}
  • Lime Wedge
  1.  Heat a pan over medium heat and add cauliflower. Cook for about 10 minutes, tossing so they don’t burn. Add in seasoning and about 1/8 cup of water. Continue cooking for about 10-15 minutes. If you want to cook it a little more, do that. If you’d rather bake it, toss cauliflower and seasoning with a little water to help coat and then bake at 350 for 20-30 minutes.
  2. Heat your tortillas and build your empire.
  3. Drizzle with avocado dressing and squeeze lime over top.
  4. Post your amazing creations on all social media outlets and then demolish.



If you’ve been with me for awhile you know my obsession with potatoes (like here, and here, and here) but i’m here to tell you about another session I have…. it basically involves anything I can scoop on a chip, which incidentally is usually also potato….the obsession worlds just collided.

OK, let’s just dive right in, shall we?!

This is basically just the easiest way to clean out your fridge with any veggies or fruit that are close to the end. Chop it all up, add in some acid and some fresh herbs and you have a bowl of delicious salsa.

This version is;

  • 1 cup diced pineapple
  • 1/2 cup red onion, diced
  • 1 cup tomatoes, diced- any variety you’d like
  • 1/2 cup green and orange bell pepper, diced
  • The juice of 1/2-1 lime, depending on your taste profile
  • S+P to taste
  • A handful of chopped herbs, I used parsley in this version

Mix to combine and grab a bag of scoops, chips, or even a gorgeous piece of sprouted toast with your favourite cream cheese and a few heaping spoonfuls of salsa. Recipe for a party :)
