Peach Whiskey Caramel Pancakes

There’s really not much intro needed for theses babies.

This recipe contains pancakes, peaches and whiskey…I mean, there’s really nothing else to say is there?!

Peach Whiskey Caramel Pancakes Breakfast

These are not your typical light and fluffy pancakes. These gems are hearty and will sustain those pesky hanger cravings until lunch.

  • 2 eggs
  • 2 ripe bananas
  • 1/2 cup rolled oats {not instant}
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon maple syrup
  1. Blend all ingredients together and let sit for 10-15 minutes.
  2. Pour into your pan set at MED heat, grease if needed.
  3. Cook until they start to show little bubbles {about 4-6 minutes depending on how much batter you used} then flip and cook other side.

Peach Whiskey Caramel Sauce

  • 5-7 small ripe peaches, peeled and pit removed
  • 1.5 cups coconut sugar
  • 5 tablespoons whiskey
  • 1 teaspoon pure vanilla extract
  • pinch of salt
  • zest of half a lemon {always use organic when using zest of a lemon, otherwise regular if fine}
  1. Blend all ingredients together until desired consistency. You can leave it a little ‘lumpy’ or blend it super smooth. {if you want it crazy smooth, strain through a fine mesh strainer}
  2. Drizzle onto pancakes and devour.

You can also use this caramel on top of ice cream, cakes, waffles, grilled cheese, broccoli…..the possibilities are endless.
