Raw {Almost} Vegan Almond Fudge

It’s fudge!

Almost Raw Vegan Almond Fudge

  • 1/4 cup coconut oil
  • 1/4 cup coconut butter {homemade preferred}
  • 1/4 cup almond butter {sometimes if i don’t have any almond butter on hand i’ll use sunflower butter}
  • 1/3 cup cacao
  • 1/2 cup {minus 1 tablespoon} maple syrup
  • 1 teaspoon vanilla
  • Sea Salt
  • Handful of roughly chopped raw {and pre-soaked} almonds
  1. InĀ  medium bowl mix together the coconut oil, coconut butter and almond butter until smooth.
    {I like to use my immersion blender}
  2. Add in cacao and mix.
  3. Add in maple syrup, vanilla, and sea salt. Mix completely.
  4. Add in almonds.
  5. Line a square pan with parchment paper and pour mixture evenly into pan.
  6. Lick spoon.
  7. Smooth out fudge as best as you can. {the mixture is very thick, you can add additional coconut oil at the start for a thinner consistency if you’d like, I prefer my fudge thick and dense!}
  8. Lick spoon again.
  9. Put pan into freezer for at least 2 hours.

To get a little freaky I also added some white chocolate to the top of this batch. To do this, melt chocolate in a double boiler and pour onto frozen fudge; re-freeze.
