I absolutely love diving into a cold crisp salad on warm days. The balance of sweet and crunch is just perfect.
This morning I threw together a bunch of fruit and was in heaven. So refreshing.
You can use any variety of fruits.
- Today I used grapes, honeydew melon, a granny smith apple & watermelon. I was going to add banana but I had already enjoyed my green smoothie and I try to limit my banana intake to 1 per day.
- Wash and chop up all your fruit and add to a large bowl.
- Pour on 2 tbls of honey. ( I gently warmed mine for easy pouring)
- Chop up some mint and mix it all together… viola! A refreshing summer fruit salad.
