How was your Halloween? Ours was rainy and cold but the costumes were fantastic. And speaking of fantastic…we had FOUR carved pumpkins which means an abundance of seeds to roast!

Roasted Pumpkin Seeds

I love roasted pumpkin seeds. I also love their nutritional benefits; high in B vitamins, magnesium, iron and protein, these little gems pack a powerful punch.
And they can help get things moving and shaking for the men in your life as well. Pumpkin seeds have been shown to increase male fertility and can also help prevent prostate problems. And the best part is that they are SO easy to make at home.

  1. After you clean out your pumpkins gather your seeds in a large bowl.
  2. Fill the bowl with cold water and let them soak for up to 2 hours.
  3. With the bowl full of water start massaging the seeds to remove all of the pumpkin guck, placing the ungucked ones in a separate bowl.
  4. Rinse them off again and then transfer to a large pot filled with cold water and a pinch of sea salt.
  5. Boil the seeds for 10 minutes, drain and then transfer seeds to a clean dish towel.
  6. Pat the seeds dry and then transfer to another large bowl.
  7. Decide what kind of seeds you want to make- see some options below.
  8. Bake your seeds at 325°F for about 10 minutes, stir and continue to bake for another 6-8 minutes. Be sure not to overcook as the inside will cook faster so the outside won’t look done, but trust me, they will be.
  9. Allow to cool slightly {if you can resist} and then eat your guilt free heart out.

  • Gently melt coconut oil {amount will depend on how many seeds are in the bowl} and pour onto seeds. Mix to evenly coat then transfer to a baking sheet.
  • Generously sprinkle with sea salt
