If you could only eat one food for the rest of your life, what would it be?

I would never be able to choose just one, but if I could choose 5…mushrooms would definitely be on the list.

Sauteed Garlic Mushrooms Vegetarian Healthy Recipe Much like my love for potatoes, I love mushrooms almost any way that you can make them.

But my favourite, and in my opinion the most flavourful, is sautéed garlic mushrooms. They most certainly aren’t the healthiest version but sometimes I don’t really care about that. This is one of those times.

I make these in a cast iron pan to really get that caramelization happening. And the key is to cook them on a lower temp for a bit longer. This really is an incredibly easy recipe but with the most delightful outcome.

Sauteed Garlic Mushrooms Vegetarian Healthy Recipe   Ingredients:

  • 1 pack of button mushrooms, washed
  • 2 cloves garlic, minced
  • 1 Tbsp grapeseed oil
  • 3 Tbsp butter {vegan or otherwise}
  • Chopped fresh parsley
  • Half a lemon

Directions: 

  1. Heat your pan just above low heat {not quite at medium, we don’t want to burn the garlic}
  2. Once warmed add oil and coat the pan.
  3. Add in your minced garlic {be sure to keep moving the garlic around so it doesn’t burn}
  4. After a few minutes add in your mushrooms.
  5. Let cook for 1-2 minutes and then add your butter, 1 Tbsp at a time {you may decide to use less or more depending on how long you cook the mushrooms and just generally how much fat you want to use}
  6. If you get impatient you can gently turn up the heat but be sure you don’t burn the garlic, it will turn into a beautiful batch of slightly bitter mushrooms…unless you’re into the kind of taste, in which case, carry on.
  7. Keep moving everything around in the pan so nothing burns, and cook for about another 10 minutes or so, still on a lower heat.
  8. Once they are at a temperature and cook to your liking sprinkle with fresh parsley, squeeze the lemon over top and serve immediately.
  9. Add mushrooms to your top 5 favourite foods list.
