Happy New Year!!
Not only is this the start of a brand spankin’ new year but it also represents the time of year when resolutions are made. C’mon, you made some didn’t you?!
Well, so did I. I don’t know if they are resolutions necessarily but I’ve definitely made some goals for myself.
What are they you might ask? Well let me tell you…my top 2 anyway…
- To post at least 3 new recipes per month for the fine folk who follow this site
- To finish writing my “Spring Clean-Up” program that I’ll be sharing with all of you!
For some (re: most) people, the New Year typically represents promises of ditching those bags of chips and plates of nachos and focusing on a healthier ‘diet’. If you are one of those people, and even if you aren’t, I have the PERFECT recipe to start you off on the right foot.

Don’t be confused by the name- Zoodles do not refer to the animal shaped pasta in a can. Zoodles are in fact noodles made from a zucchini! If you haven’t tried them yet this is the time to broaden your horizons. Even if you don’t have a spiralizer, you can use a veggie peeler or even just a nice sharp knife.
