Taco Pasta- this is the NEW #tacotuesday

#tacotuesday is a big deal, at least in my house. We take that shit very seriously.

We also take our pasta very seriously. So when Taco Tuesday came around and we didn’t have any shells, well, we had to re-invent the wheel.

And it was awesome!

Let’s just dive in, shall we?

  • 1 cup onion, diced
  • Splash of coconut oil
  • 2 large portobello, cleaned and sliced
  • 2 handfuls of choice bell peppers, sliced thin
  • 1 can black beans, rinsed
  • 1.5 cups chopped broccoli
  • Taco Seasoning ( I use a mixture of cumin, cayenne, chili powder, garlic powder, garlic powder, paprika, S+P)
  • Avocado, smashed up
  • 1 package of rice noodles
  1. Heat your skillet to medium and cook up your diced onions in coconut oil
  2. After a few minutes add in sliced portobellos
  3. While that is cooking, boil a pot of water and make your rice noodles
  4. Add sliced bell peppers, black beans and then chopped broccoli
  5. Sprinkle on your fave homemade taco seasoning
  6. Cook for 5 mins
  7. Drain and rinse noodles and add to skillet
  8. Mix it all up, top with smashed avocado and forget all about not being prepared with taco shells
